Red Mountain Resort & Spa (Utah)
Banana Bread
3/4 Cup Sugar
1 Cup + 3 tbsp. Canola Oil
2 Large Eggs
1 Cup + 3 tbsp. Mashed Bananas
1/4 Cup Water
1/2 tsp. Salt
1 1/3 Cups All-Purpose Flour
1/2 tsp. Baking Soda
1/4 tsp. Baking Powder
3/4 tsp. Cinnamon
1/4 tsp. Nutmeg
1/2 tsp. Allspice
1/3 Cup Chopped Nuts (pecans, walnuts, etc.)
. Mix the sugar and oil, add eggs and stir until well blended.
. Mix in the mashed bananas, water and salt.
. Separately, combine the flour, baking soda, baking powder, cinnamon, nutmeg and allspice. Sift.
. Combine the flour mixture with the banana mixture.
. Stir in the nuts. Pour into loaf pan.
. Bake for 55-60 minutes at 350°F. The bread is done when a toothpick comes out clean.
