CRUNCHY GINGERED COLESLAW
Birdwing Spa

  • 4 cups shredded cabbage
  • 1- 8 1/4 ounce can pineapple tidbits (juice pack), drain and reserve juice
  • 1/2 of 8 ounce can sliced water chestnuts, slivered
  • 1 cup fresh parsley, chopped
  • 1/4 cup green onion, sliced
  • 1/3 cup reduced-calorie mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon grated gingerroot
  • 1 tablespoon raspberry vinegar
  • 2 tablespoons reserved pineapple juice
  • 1/2 teaspoon salt (optional)
  1. Combine first 5 ingredients in large bowl.
  2. For dressing combine mayonnaise, mustard, sugar, gingerroot, vinegar, pineapple juice and salt.
  3. Spoon dressing over cabbage mixture, toss to coat well.
  4. Cover and chill. Before serving, toss salad again.
