Spinach Salad with Creamy Carrot dressing

1/2 cup walnuts, toasted and coarsely chopped
1/3 cup carrot juice
1/3 cup yogurt, skim milk
1 tablespoon fresh lemon juice
1 teaspoon cumin
1/4 teaspoon salt
8 cups spinach leaves

Whisk together dressing ingredients (carrot juice, yogurt, lemon juice, cumin and salt). Toss with spinach and walnuts.
